Apple Oatmeal Pancakes

We like breakfast for dinner and I will often make these for dinner. I usually make enough so we have left overs though for breakfast. These pancakes are really flavorful with the cinnamon and applesauce in them. And the whole wheat and oatmeal give it a good texture. Just a really good pancake that is pretty healthy too.


1 cup whole wheat flour
1 cup quick cooking or old fashioned oats
3 tablespoon sugar or even splenda/sugar substitute
2 teaspoon baking powder
3 teaspoon ground cinnamon
1/2 teaspoon salt
2 egg
1 1/4 cup milk - low fat or fat free
1 cup sugar free applesauce
4 tablespoons canola oil
Optional: 1/2 cup chopped walnuts

Stir together flour, oats, sugar, baking powder, cinnamon and salt in a mixing bowl.

Beat eggs in separate bowl; stir in milk, applesauce, and oil.

Add liquid mixture to dry ingredients, stirring just until blended. Fold in walnuts.

Heat greased griddle or skillet over medium heat or to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.

For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown.
